Broccoli Salad Recipe

This cold broccoli salad recipe is even better the next day.

What you need:


  • 4 cups broccoli chopped into 1 inch pieces
  • 1/4 cup finely chopped red onion
  • 1/4 chopped celery
  • 1/4 cup raisins
  • 1/2 cup raw unsalted sunflower seads
  • 1/2 lb. bacon, cooked and crumbled
  • 1/4 cup white sugar
  • 3/4 cup prepared salad dressing
  • 2 tsp. cider vinegar
  • sald and freshly ground black pepper to taste

What you do:
Place the chopped broccoli in a large serving bowl. Mix in the onion, celery, raisins, sunflower seeds and bacon. Combine the sugar with the salad dressing or mayonnaise. (I use low-fat and it tastes just as good) Add the vinegar and season with salt and pepper. Pour over the salad and toss until well combined. Refrigerate for a few hours before serving.

Spicy Tomato Salad Recipe

Everyone loves this tasty spicy tomato salad recipe. Think outside the bowl -use different tomato types and colours. Try out different kinds of basil too. Opal basil is purple and makes this spicy tomato salad recipe look fabulous and festive.

What you need:

  • 6 large tomatoes
  • 1/2 red onion
  • 1 garlic clove
  • 3 T olive oil infused with hot pepper
  • 4 large basil leaves or 1 tsp dried basil
  • salt and pepper to taste


What you do:


Cut tomatoes into large chunks. Do not make then all uniform pieces. This lets more of the juice out into the "dressing". Slice onion very thin so they are see through. Squish garlic with something flat on the bottom. For example you can use the flat side of a large knife or the bottom of the oil bottle.

Combine these in a bowl with the rest of the ingredients. Mix well and let sit. The longer you let it sit the stronger the flavours will taste.

Before serving remove the hunk of garlic and discard. Serve with crusty Italian bread for dipping.
