Maple Syrup Chicken a la Dave Recipe

This maple syrup chicken recipe was inspired by my brother-in-law to be who along with his brother runs a maple syrup operation. As all my recipes this takes no time to prepare and little to no skill. My maple syrup comes from Crosbie's Maple Syrup but any real maple syrup will do. Low levels of zinc have been associated with decreased prostate health in men. Only real maple syrup contains zinc so use it or lose it!

What you need:

  • 4 chicken breasts
  • 1 C pure maple syrup
  • 1 onion sliced
  • 1/4 tsp fresh ground pepper
  • 2T oil


What you do:


Heat up a frying pan to medium high with the oil in the pan. Brown all of the chicken and then turn heat down to low.

Add the onion separating the segments into rings. When the onion is translucent sprinkle the pepper over everything in the pan then add the maple syrup. Simmer until the maple syrup bubbles then remove from heat.

Juice Chicken Recipe

This juice chicken recipe is heavenly and takes no effort to make. And only takes about 30 minutes. I serve it on top of rice.

What you need:

  • 4 boneless skinless chicken breasts
  • 2 cups of any clear juice ie grape or apple
  • 1Tbls. cooking oil

What you do:

Brown the chicken in a frying pan with a tablespoon of oil When the chicken is cooked put in all of the juice at once. Bring to a boil. Watch over the chicken carefully at this stage. Let all of the juice boil off. When the juice becomes thicker like syrup stir the chicken around in it.

You can serve this to the pickiest kid. I have-and they will ask for more.

Johnny's world famous Chicken Wraps Recipe

Some people call these Chicken Wraps Fajitas, but I'm lazy. I call them chicken wraps, or when I'm really lazy, just wraps. Either way, this is the lazy man's answer to a healthy hearty meal. I stand by my Lazy Johnny's World Famous Chicken Wraps!


What you need:

  • Chicken breast (one piece per serving)
  • Green/Red/Yellow/Orange peppers (whatever you want 1/2 per serving)
  • Salsa
  • Low fat sour creme
  • Jalepeno peppers (how many depends on who you're serving)
  • Wraps, I prefer the large ones...'cause I like to eat!

What you do:

1. Start the BBQ and get it warm
2. Cut up the peppers and put them in some tin foil
3. Put the peppers on the BBQ (top rack) and also put the chicken on
4. Turn the chicken so that both sides are hit twice
5. When it's almost done, put some BBQ sauce on the chicken (your choice)
6. Cut up the Jalepenos into thin slices
7. Get ready to eat, when the chicken is done, the peppers will be too.
8. Put your stuff on the wraps and eat.

This shouldn't take longer than 20 minutes to do and they are delicious. For a bit of flavour, try putting Franks hot sauce, chipotle or your other favourite sauce on them. I'm telling you, make these once and the family will be asking "when are we having chicken wraps next?". Serve them as often as you like, they're good for you!

Chicken in White Wine Mushroom Sauce

Better known to our family as Sharon's Wine Chicken - my mom!

This succulent white wine chicken recipe will melt in your mouth. It goes really well with my Creamy Potato recipe that you can find under Vegetables. Enjoy!

Chicken


Slice 8 – 10 pieces of boneless skinless chicken breasts in half. Dredge in flour seasoned with salt, pepper and garlic to taste. In a large pan heat oil on medium high heat and saute both side until lightly brown. Place cooked chicken breasts in a baking dish.

Sauce

Saute 2 large onions in 4 tbsp. of butter until soft. Add 4 tbsp. of flour, cook and stir approximately 5 minutes. Add 1 ½ cups chicken broth and ½ cup white wine. Add approximately 12 sliced mushrooms and season to taste. Poor over chicken and bake at 350 degrees for 30 minutes.

Santa's Breakfast Recipe

Santa himself cannot resist this Santa's Breakfast Recipe...then again, the big guy looks like he enjoys a hearty meal, this will not disappoint him!

What could make Christmas morning a little less stressful. Why not have breakfast prepared the night before so all you have to do is put it in the oven. Not only is this recipe a real time saver, it's absolutely delicious. ENJOY!

What you need:

  • 16 slices white bread, crust removed
  • 16 slices back bacon
  • 16 slices old cheddar
  • 6 eggs
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. dry mustard
  • 1/4 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1 tsp. worcestershire sauce
  • 3 cups milk
  • Dash Tabasco sauce
  • 1/4 lb. butter
  • Crushed corn flakes.


What you do:

In a 9x13" buttered glass dish, put 8 slices bread (add pieces to cover dish entirely) Cover bread with bacon, add cheese then cover with remaining bread slices to make a sandwich effect. Beat eggs, salt & pepper and add mustard, onion, green pepper, worcester sauce, milk and Tabasco. Pour over sandwiches. Cover and let stand in fridge overnight. In the morning, melt butter and pour over top. Cover with crushed cornflakes. Bake, uncovered for 1 hour at 350. Let sit 10 minutes before serving.

Mom's Pecan Sandies Recipe

Everyone will love these little Christmas gems. Mom's Pecan Sandies Recipe has always been a family favourite, at Christmas or any time of the year.

What you need


  • 1 cup butter
  • 1/3 cup white sugar
  • 1/3 cup gound pecans
  • 2 tsp. water
  • 1 tsp. vanilla
  • 2 cups all purpose flour


What to do
Cream butter and sugar together. Add remaining ingredients and mix well. Roll each cookie into a 1inch ball. Bake at 350 for 10-15 minutes. Roll each cookie in icing sugar while warm.

These pecan sandies freeze really well, so you can bake well before Christmas and take them out when the festivities begin.

Shortbread Cookie Recipe

Jackie's Shortbread Cookie Recipe

This recipe is a great one for cutouts. Just grab the kiddies and the cutouts and have a great time.

What you need


  • 1/2 cup corn starch
  • 1 cup flour
  • 1/2 cup icing sugar
  • 3/4 cup butter

What you do
Cream butter and sugar, then add remaining ingredients. Mix well. Roll out dough on a floured surface until dough if 1/8 inch think. Cut into shapes with cookie cutters. Sprinkle with coloured sugar, sprinkles or silver candy balls. Bake on an ungreased pan at 300 for 20-25 minutes.

Sugar Cookie Recipe

This sugar cookie recipe is great for getting the kiddies involved. Get out he cookie cutters for Christmas, Valentines, Easter, Thanksgiving, whatever the occasion. Who doesn't like Sugar Cookies?

Makes about 3 1/2 dozen, 2-inch cookies

What you need

  • 1/2 cup butter, preferably unsalted, softened
  • 1 cup white sugar
  • 2 cups all-purpose flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 egg, lightly beaten
  • 1 tsp. lemon extract
  • 1 tbsp. milk

Icing

  • 1 to 1/2 cups sifted icing sugar
  • 1 egg
  • Food coloring, sprinkles, silver balls, coloured sugar

What you do
Line baking sheets with parchment paper, or lightly grease baking sheets. Using an electric mixer, beat butter with sugar until fluffy. In a separate bowl, sift flour with baking powder and salt. Beat into butter mixture until well blended. Beat in egg, lemon extract and milk until combined.

Divide dough into 2 pieces; shape each into flattened rounds. Wrap in plastic wrap and refrigerate 1 hour. Before rolling out dough, preheat over to 350F. Foll out dough with floured rolling pin on a floured surface, until dough is 1/8-inch thick. Cut into shapes with cookie cutter, setting on baking sheet about 1 inch apart. Bake 8 to 10 minutes.

Let cookies coll on baking sheets for 5 minutes, then cool completely on a rack. Meanwhile, beat icing sugar and egg white together to a spreading or piping consistency. If necessary, thin with a little water or milk. Put icing into some small bowls and tint with food colouring if desired. Decorate cookies with icing, sprinkles, silver candy balls or coloured sugar.

Mama's Biscuits Recipe

If Mama's not happy ain't nobody happy and these biscuits make Mama happy.

What you need

  • 2 C flour
  • 4 tsp baking powder
  • 1 tsp salt
  • 1/4 cup butter or margarine softened
  • 1C milk

What you do

Heat oven to 425 degrees F.

Combine dry ingredients in a large bowl, then make a well in the centre of it and add butter and milk. Mix thoroughly with a fork until a stiff dough forms

Roll the dough out on a counter that has been dusted with flour. Use a cookie cutter or the opening of a drinking glass to cut out biscuits. Place them on an ungreased cookie sheet. Put the sheet on the middle rack in the oven.

Bake for 12 minutes.

Makes about 15 medium sized biscuits

Reindeer Dropping Recipe

If you like chocolate and coconut, you'll love these little tidbits.

This is my best friends favorite recipe, but then again she and her kids love coconut. Chocolate and coconut together, you won't find a sweeter recipe than this reindeer dropping recipe!

What you need

  • 2 cups sugar
  • 1/2 cup milk
  • 1/2 cup butter
  • 1/3 cup coco
  • 3 cups quick oats
  • 1 cup coconut

What you do

Boil sugar, milk, butter and coco. Remove from heat and add in the oats and coconut. Mix together then with a tablespoon drop mixture on wax paper and let cool.

Sugar Topped Ginger Cookie Recipe

If you like ginger bread cookies, then you'll love this Sugar Topped Ginger Cookie Recipe!

What you need:

  • 3/4 cup shortening
  • 1 cup sugar
  • 1 egg
  • 4 tbs. molasses
  • 2 cups flour
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. cloves
  • 1tsp. ginger

What you do:

Cream sugar and shortening, blend in egg and molasses. Sift all dry ingredients and add to egg mixture. Blend until moistened. Roll in small balls and coat with sugar. Place on a greased pan and back at 350 for 10-12 minutes.
